spinach artichoke lasagna rolls-ups

i have this passion that i'm not too great at, but i really want to be. a master chef is in my future, i can see it now, it might be far off, but you've got to start somewhere right?
  i really enjoy finding new recipes and trying them out so i have decided to share these findings on my blog with my discoveries of what to do and maybe what not to do.
   
tonight this very delicious recipe stood out to me on "two peas & their pod" and i thought i'd give it a go.
 zach and i both love lasagna(seriously he orders it at every italian restaurant without fail) 
and this recipe didn't disappoint. 
it was very delicious and not to difficult to make!
i liked the rolling part, it was fun to do and unlike traditional lasagna, it kept its shape beautifully after being cooked, making it fun to eat too! 
i think i may adopt this method for any type of lasagna. 
it'd be simple enough to add meat to this recipe and subtract the spinach and artichokes.. or keep them, whatever you please. 

i often make lots of silly mistakes when cooking so i figure i would fill you in on what not to do so that your process may be just a little bit smoother than mine was! 
1. maybe don't use the non boil lasagna noodle for this recipe it gets a little soggy. i had a couple of both and the boiling method worked a little better.
2. when buying ricotta cheese avoid the biggest size they offer, unless you plan on making lasagna every day of the week. which i may have to do.
3.allow enough time for the spinach to thaw, the microwave does weird things to leaves.
4. be patient after you take it out of the oven it needs time to settle. slippery and scorching hot neat rolls, quickly turn into  a mountain.

absolute nothingness.

its summer! wahooo! i have so much enjoyed my few weeks of absolute nothingness. 
i am also just thrilled to start up some summer classes on monday….. or maybe thats a little bit of a lie. but o well i must get those dang gen eds done.
 they may be the death of me. math mostly. 
i am excited for my international children's literature class though! 

i also can not wait to start my lovely job.
 i am going to be working at rowland hall summer camp as a camp councilor and i seriously could not be more giddy about it. 
its going to be a blast! 

so like i said my life has been filled with a whole lot of nothingness. but i mean this in the best way possible. 
zach and i get to spend so much time together which is swell!
 we have been working out in the mornings with the trx.(have you heard of it?) suspension pulley thing, works your muscles…. all of them. 
anyway zach is the best work out buddy.
 i have never been a fan of working out. i usually just dance around and count that… but since summer has started up and the dancing has slowed down i decided it would be a good idea to give it a shot. 
its really not bad when you have a super attractive husband working out with you.
 he gives me tennis lessons too! yippee. he is quite the coach. i'm slowly improving….. slowly slowly. but its fun. 
i like tennis. 
i want to be able to play up until im an elderly lady. i hear its one of those sports.

we have also taken up frisbee. its a great hobbie. 
we have experimented with some new recipes, visited friends and family. taken some nice naps. 
watched the voice… kinda love that show.
 o and got instagram…. i know this is not a big deal to most and its been out for ages, but me being behind the times in technology, its a big deal.
 zach lets me use his new iphone. he is nice like that. 
best hubby award. 

thats our summer so far in a nut shell. 
o we went to st george for this little ones blessing day. it was a good time for sure. 
she is a bundle of joy! and i'm a wanna be photographer. 








i get to speak in church tomorrow for mothers day. stay tuned. i may or may not make it. speaking terrifies me slightly. but i sure do love moms! so it should be fine…

harry potter. all day.




fall semester i read the harry potter series.
(a little late i know)
i was just stubborn growing up, and although i loved reading, i refused to read harry potter because everyone was doing it…. (probably because its the best thing in the entire world!) 
i can not believe that i missed out on such beauty my whole childhood.
 it took me being a stressed out college student to step into the world of magic and fall in love.
 so its safe to say, walking to and from school reading harry potter and sometimes substituting it in place of homework is what got me through the first half of my junior year. 
its also safe to say, now i am slightly obbsessed. 
thank goodness i have friends who are equally obbsessed. 
samantha and i have been planning a harry potter marathon for some time now. 
we talked and talked about how we would watch all 8 movies in one day, how it would be the best thing ever, and how we would make crepes for every meal, and how it would be the best thing ever. 
the thing is we are pretty good at talking and laughing about our crazy plans, but when it comes to actually carrying them out... thats when we fail a little bit. 
not this time! 
monday april 29th at 11:20ish am the movie marathon of all time began.
19hours and  45 minutes (said the internet) 
we can do it! said the hp participants. 
it was a long day full of laughter, constant harry potter, crepes of all sorts and nerdyness.

zach had lots of studying to do so he couldn't make it to all 20 hours, but he joined us for the goblet of fire!

                        7:00 am tuesady morning. we made it…. sorta. we were in and out of sleep during movies seven and eight. but. hey it was a good fight! final three. samantha hiding in the back.
